Popular Kerala sadya dish from raw bananas. Kalan -Kaalan is a more popular traditional Keralite dish made of yogurt, coconut, and vegetables tuber like yam and raw plantain. It is served as part of the sadya, the traditional Kerala feast. Kalan is distinct from all the curd/yogurt based gravies and it is very easy to make and is an ultimate comfort food with some rice and any spicy vegetable stir fry on the side. Usually kalan recipe Kerala style is prepared with Chena /Elephant Foot /Yam and Pachakkaya /Raw Plantain.

Ingredients for Kalan Recipe

  • 1/4 No.s Sliced Raw banana
  • 1/4 cup Yam diced
  • 2 No.s Green chilli
  • 0.13 teaspoon Turmeric powder
  • 0.13 teaspoon Chilly powder
  • 1/4 teaspoon Pepper powder
  • 0.13 teaspoon Fenugreek powder
  • 1/4 teaspoon Ghee
  • 1/4 pinch Salt
  • 1/4 cup Curd
  • 1/2 tablespoon Coconut oil
  • 0.13 teaspoon Mustard seeds
  • 3/4 No.s Whole red chilly
  • 1/2 Curry leaves stem
  • 1/4 cup Grated coconut
  • 0.13 teaspoon Cumin seeds

Preparation Directions

  • STEP 1.Take 1 tsp of pepper powder in a bowl. Add ¼ cup of water and filter the pepper water. Keep it aside.

Cooking Directions For Kalan

  • STEP 1.Take an earthen pot for cooking. Transfer the sliced raw bananas,1 cup of diced yams, 4 chopped chillies and filtered pepper water, ½ tsp each of chilly powder and turmeric powder to the pot.
  • STEP 2.Cover with lid and cook for 5-6 minutes on a medium flame. Add a pinch of salt and mix the vegetables.
  • STEP 3.Pour in 1 tsp of ghee when the water comes to boil. Stir and cook again with a lid for 2 minutes.
  • STEP 4.Uncover the pot and add in ½ tsp of powdered fenugreek seeds, 1 cup of Coconut gravy and mix.
  • STEP 5.Boil with a lid on. Turn the flame to low heat and add 1 cup of curd. Stir well the mix. Add a pinch of salt and turn off the flame. Garnish with the tempering.

Cooking Directions for Tempering

  • STEP 1.To make tempering add 2 tbsp of coconut oil in a pan.
  • STEP 2.Add ½ tsp of mustard seeds. When the mustard seeds splutter add chopped 3 dry red chillies and curry leaves.
