A classic Maharashtrian snack made of gram flour, spices and an addition of cashew nuts.Kothimbir vadi is a delicious savory crisp snack from the Maharashtrian cuisine made with gram flour (besan), coriander leaves, peanut, sesame seeds and spices. They are a popular tea time snack loaded with coriander leaves (cilantro).

Ingredients for Kaju Kothimbir Vadi Recipe

  • 2-3 tablespoon cashewnut paste
  • 2 tablespoon chopped fresh coriander leaves
  • 1 cup gram flour
  • 1 teaspoon carom seeds
  • As required Salt
  • 1-2 green chillies, finely chopped
  • 1 tablespoon Lemon juice
  • 1 teaspoon red chilli powder
  • 1/2 tablespoon tamarind pulp
  • 1/2 tablespoon turmeric powder
  • 1 tablespoon Oil
  • As required Chopped fresh coriander leaves for garnishing
  • As required Roasted broken cashew nuts for garnishing
  • As required Green chutney for serving

Directions: Kaju Kothimbir Vadi Recipe

step 1

  • STEP 1.Mix together gram flour, carom seeds, salt, green chillies, lemon juice, chilli powder, tamarind pulp, cashewnut paste, turmeric powder and coriander leaves in a bowl. Add water as required and whisk to a thick batter.

step 2

  • STEP 1. Heat a non-stick pan. Add batter and cook till the mixture hardens.

step 3

  • STEP 1. Transfer into a mould and spread evenly. Set aside to cool at room temperature. Cut into squares.

step 4

  • STEP 1. Heat sufficient oil in a kadai. Deep-fry the vadis till golden-brown. Drain on absorbent paper.

step 5

  • STEP 1. Garnish with coriander leaves and cashew nuts and serve hot with green chutney.
