Kaeng Liang or Gaeng Liang is a peppery, light, yummy vegetable soup believed to help boost breast milk supply in Thai culture. kaeng liang uses a ton of different kinds of vegetables, especially squashes. Make this simple recipe for your weekend lunch by using a handful of ingredients like chicken, shrimp, curry paste, squash, zuchinii mushrooms, baby corns, thai basil, chilli and other flavourful seasoning ingredients.

Ingredients for Kaeng Liang Recipe

  • 3 cup chicken stock or shrimp stock, unsalted, preferably homemade
  • 1 recipe kaeng liang curry paste
  • 2 tablespoon 3 fish sauce
  • 2 cup kabocha squash, unpeeled, bite sized pieces
  • As required Half an angled luffa or half a large zucchini
  • stick Half a chayote squash, peeled and cut into
  • 150 gram oyster mushrooms, torn into bite sized pieces
  • 6 ears baby corn, quartered
  • 150 gram shrimp or chicken
  • 1 cup Thai lemon basil or Thai basil
  • As required Jasmine rice for serving
  • As required Kaeng Liang Curry Paste
  • 1.50 tablespoon dried shrimp
  • 1/2 teaspoon 0.75 white peppercorns
  • 1/4 cup Heaping shallots, thinly sliced
  • 2 tablespoon grachai , finely chopped
  • 1 2 Thai chilies
  • 1/2 teaspoon fermented shrimp paste

Directions: Kaeng Liang Recipe

step 1

  • STEP 1.For the curry paste grind the dried shrimp, peppercorns, grachai and thai chilies, shallots and pound till fine. Add this shrimp paste to the remaining dried shrimp and combine well.

  • STEP 1.In a medium pot, bring the stock to a boil, then add the curry paste and simmer for 2-3 minutes. Add a pair of tbsp of fish sauce, then add kabocha squash and simmer for another two minutes.

  • STEP 1.Add all remaining vegetables and simmer for 3-4 additional minutes or till the kabocha squash is often punctured simply with a fork. (timing depends on the thickness of your kabocha.)

  • STEP 1.Add shrimp or chicken and cook simply till they’re nicely cooked and done. Turn off the flame and stir in the thai lemon basil.
