Cooking Directions

  • STEP 1.In a bowl, marinate the mutton with yogurt, ginger-garlic paste, red chili powder, turmeric powder, and salt. Let it sit for 30 minutes.
  • STEP 2.Heat oil in a kadhai or deep pan. Add cumin seeds, cloves, and cinnamon stick. Saute until fragrant.
  • STEP 3.Add chopped onions and cook until golden brown. Then, add ginger-garlic paste and cook for another minute.
  • STEP 4.Add chopped tomatoes and cook until they turn soft and mushy. Add the marinated mutton and cook on high heat for 5 minutes.
  • STEP 5.Reduce the heat to low, cover the kadhai, and let the mutton cook for about 1-2 hours or until tender. Stir occasionally.
  • STEP 6.Add the kadhai masala, garam masala, and kasuri methi. Cook for another 5 minutes.
  • STEP 7.Garnish with fresh coriander leaves and serve hot with naan or rice.

Cooking Tips

  • Marinating the mutton for at least 30 minutes helps to tenderize the meat and infuse it with flavors.
  • You can adjust the spice level according to your preference by adding more or less red chili powder.
  • For a smoky flavor, you can roast the spices for the kadhai masala before grinding them.
  • If the gravy is too thick, you can add a little water to adjust the consistency.

Storage and Serving

  • Kadhai Gosht can be stored in an airtight container in the refrigerator for up to 3 days.
  • Reheat the dish in a pan or microwave before serving.
