A healthy homemade version of restaurant kadai vegetables using mixed steamed vegetables tossed in kadai masala. Generally recipes are made in a kadai that resembles the Chinese wok. This North Indian or Punjabi dish is known for its creamy spicy texture. Typically in vegetarian its made with paneer and cream with lots of ghee and masala. The aromatic sabzi is highly recommended for the foodies.

Ingredients for Kadai Vegetable Recipe

  • As required Oil for stir frying
  • 200 gram Cauliflower small florets steamed
  • 2 Carrots diced or sliced Nos
  • 1 inch Green beans cut into s 100 gms
  • 1 Onion diced Nos
  • 1 capsicum diced diced
  • 3 No.s Garlic cloves grated
  • 1 inch Ginger grated
  • 1/2 cup Cooked tomato puree
  • 1 teaspoon Cardamom powder
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 1/2 teaspoon Garam Masala powder
  • 1 teaspoon Red chilli powder
  • 1 tablespoon Kasuri methi
  • 1 tablespoon Butter
  • As required Salt

Directions: Kadai Vegetable Recipe

step 1

  • STEP 1.In a pressure cooker add 200 gm cauliflower florets, 2 carrots sliced or diced, 100 gms green beans cut into 1 inch pieces, salt to taste. Add2 tbsp of water and pressure cool for 1 whistle. Release pressure immediate;y by holding the cooker under running water. Vegetables should be cooked but firm.

  • STEP 1.Heat a wok or kadai, add oil for stir frying, 1 inch grated ginger, 3 grated cloves garlic, 1 diced onion and 1 diced capsicum. Stir fry on high heat for 3 to 4 minutes till the onion and capsicum slightly change colour and become tender but not completely soft.

  • STEP 1.At this stage add 1 tsp turmeric powder, 1 tsp red chilli powder, 1 tsp coriander powder, ½ tsp garam masala powder, 1 tsp cardamom powder, ½ tsp salt. Stir well to combine all the ingredients. Saute for a few seconds .

  • STEP 1.Cover the pan and allow the vegetables to cook on a simmer for 5 to 7 minutes.

  • STEP 1.Lastly add 1 tbsp butter. Kadai vegetables are ready.
