A butter mushroom curry with fresh vegetables in a tomato gravy. Kadai Mushroom is such a super easy and delicious dish of sautéed button mushrooms, onions, bell peppers (capsicum) in a spiced, tangy tomato sauce. The recipe comes together in 30 minutes and so delish with naan, roti and even bread rolls. Mushrooms, spices, onions, tomatoes and bell peppers – their combination never goes wrong.

Ingredients for Kadai Mushroom Sabji Recipe

  • 1 tablespoon Ghee
  • 250 gram Mushrooms washed and quartered
  • 1 Carrot large cut into slices Nos
  • 1 Green capsicum diced Nos
  • 1 Red capsicum diced Nos
  • 1 teaspoon Cumin seeds
  • 1 Onions Roughly chopped Nos
  • 1 inch Ginger chopped
  • 4 Garlic chopped cloves
  • 2 Badi Elaichi Nos
  • 2 No.s Tomatoes. Pureed
  • 1/2 teaspoon Turmeric powder
  • 1/2 teaspoon Cumin powder
  • 1/2 teaspoon Coriander powder
  • 1 teaspoon Red chilly powder
  • 1/2 teaspoon Garam masala powder
  • 1 teaspoon Kasuri methi
  • 1 teaspoon Honey
  • As required Salt

step 1

  • STEP 1.Place the kadai on the heat and add 1 tbsp ghee or butter, 1tsp cumin seeds, 1 inch ginger chopped, 2 cloves garlic chopped, 1 roughly chopped onion, 1 green capsicum diced, 1 red capsicum diced, 1 large carrot cut into slices.

  • STEP 1.Fry onions until they are golden and mushy. Then add 2 badi elaichi (brown cardamom), puree of 2 fresh tomatoes, ½ tsp turmeric, ½ tsp cumin powder, ½ tsp coriander powder, 1 tsp red chilly powder, ½ tsp garam masala powder and salt to taste.

  • STEP 1.To this add 250 grams of washed and quartered mushrooms and 1tsp kasuri methi. Mix well. Then add 1tsp honey to balance flavours.

step 4

  • STEP 1.Cover and simmer for 4 to 5 minutes and mushrooms will be cooked and ready to serve. Turn off the heat.
