Kabishambardhana Burfi Recipe

A very unique dessert prepared from cauliflower & khoya,also it was the favourite dessert of our leader Rabindranath Tagore.This sweet dish is one of the favourite sweet cooked in Jorasanko, where the great poet Rabindranath Thakur resided. This dish was invented by his neice on his 50th birthday. This sweet dish is not found any where in the shops. You have to make it to enjoy it. Cauliflower is ground and made in to a barfi. In eairler days it was ground on shilbatta.. but now a days grinders have taken over the kitchen.

Ingredients for Kabishambardhana Burfi Recipe

  • As required A Few saffron strands
  • 1/2 cup warm milk
  • 1 Nos cauliflower
  • 3 tablespoon Ghee
  • 25-30 Nos cashews
  • 1 cup Sugar
  • 1 cup Khoya
  • 1/2 teaspoon cardamom powder

step 1

  • STEP 1.In a bowl soak saffron strands in warm milk.

  • STEP 2.Cut cauliflower in pieces

step 3

  • STEP 3.In a boiling water add cauliflower pieces,cover the lid and cook for 2 mins.

  • STEP 4.Strain the boiled cauliflower and keep it aside for 10 mins

  • STEP 5.Now grind and make a paste of boiled cauliflower

  • STEP 1.add ghee in a pan & heat it.

step 7

  • STEP 1.add cashews, raisins and saute them a bit.

  • STEP 1.now add the cauliflower paste and cook it until the color changes

  • STEP 6.4.stir the mixture to avoid sticking.

  • STEP 7.5.add one cup of sugar and mix well

  • STEP 8.6.after the sugar melts add khoya and mix well.

step 14

  • STEP 9.7.cook it at medium flame for 10 mins

  • STEP 10.8.then add the saffron milk and cardamom powder

step 16

  • STEP 1.spread it in a plate and rest it for 2 hours. Cut into pieces later.
