Ingredients for Kaaju Katli Recipe

  • 2 Cups cashew
  • 1 Cups Sugar
  • 1/2 Cups water
  • 1 Tsp hee
  • 1/4 Tsp Cardamom powder

Directions: Kaaju Katli Recipe

  • STEP 1.1.Take 2 cup cashew and blend to a fine powder. make sure to pulse and blend else, the cashew will release oil and turns into a paste.
  • STEP 2.2. Sieve the cashew powder making sure there are no lumps. keep aside.
  • STEP 3.in a kadai take 1 cup sugar and ½ cup water.
  • STEP 4.3. Stir well and dissolve sugar. boil for 5 minutes or until 1 string consistency is attained.
  • STEP 5.4. Add in powdered cashew and mix well.
  • STEP 6.stir continuously until the mixture is well combined and smooth paste is formed.
  • STEP 7.now add 1 tsp ghee and ¼ tsp cardamom powder. mix well.
  • STEP 8.5.Continue to cook until the mixture turns smooth paste and starts to separate pan slightly. do not overcook, as the burfi will turn hard.
  • STEP 9.6.Transfer the mixture on to the butter paper. make sure to grease the butter paper with ghee.
  • STEP 10.7. Now fold using a spatula until the mixture thickens forming a dough.
  • STEP 11.8.Once the dough is formed, knead slightly, to form a soft dough.
  • STEP 12.9.Place the cashew dough between butter paper and roll using a rolling pin.
  • STEP 13.roll slightly thick making sure it's uniform.
  • STEP 14.now grease with ghee and apply silver leaf or silver vark.
  • STEP 15.10.Now cut into diamond shape or shape of your choice.
