It has been my long cherished desire to cook some spicy nigerian jollof rice. I have not eaten jollof rice ever since i left nigeria. Jollof rice is a fiery red coloured rice preparation using tomatoes, local red peppers called scotch bonnet and canned tomato paste along with some herbs and local spices.

Ingredients for Jollof rice (nigerian tomato pepper based rice) Recipe

  • 1/2 cup uncooked rice
  • 1/2 large fresh tomato roughly chppped
  • 1/2 small onion roughly chopped
  • 1/2 red capsicum, seeds discarded
  • 1.50 ton4 scotch bonnet peppers or any other fiery red oepper
  • 1 tablespoon canned tomato paste
  • 1/2 vegetable stock cube or curry powdee
  • 0.13 teaspoon dried thyme or oregano powder
  • 1/2 pinch Salt
  • 1-1.50 tablespoon oil or palm oil
  • As required water to cook the rice
