A bengali recipe of ridged gourd with species. A jhal is a type of Bengali curry characterised by the sharpness of its flavours, unlike its close cousin, the jhol, which is usually more mellow. This recipe is defined by the heat and aroma that comes from freshly crushed green chillies and kaalo jeere (nigella seeds). In a way, the green chilli and kaalo jeere combination is a timeless one when it comes to Bengali cooking.

Ingredients for Jhinger Jhal Recipe

  • 500 gram ridged gourd
  • 10 gram mustard oil
  • 1 piece bay leaf
  • 1 piece dried red chilli
  • 1/2 teaspoon nigella seeds
  • 2 piece green chillies
  • 15 coconut paste
  • 40 gram Milk
  • 1/4 teaspoon maida
  • 8 gram Salt
  • 10 gram Sugar
  • 150 gram Water

step 1

  • STEP 1.Crush green chili, nigella seeds and salt into a paste. Cut and wash the ridged ground. In a bowl pre boil the ridged gourd. In a pan heat oil and temper with dried red chilli, bay leaves, green chillies, nigella seeds and boiled ridged gourd. Add green paste, coconut paste, sugar and milk. Cook and serve.
