  • STEP 1.Heat olive oil in a large pot over medium heat. Add onions and garlic, and sauté until softened.
  • STEP 2.Add the spices (such as cumin, paprika, turmeric, and cinnamon) and cook for another minute to release their flavors.
  • STEP 3.Add the vegetables (carrots, zucchini, bell peppers, and tomatoes) to the pot and stir to coat them with the spices.
