The same crispy delights, quite similar to sev in texture and taste are made with jaggery that takes the credits for the sweetness. The dough of the sev is made with a mixture of gram flour, rice flour and green moong flour. Moreover, the aroma of ghee is enough to make someone drool over the sev in no time. The sev is perfect for people who enjoy both- sweet and savoury flavours in one dish. Ingredients for Jaggery Sev Recipe

  • 3/4 cup yellow split green gram
  • 3/4 cup gram flour
  • 1/2 cup rice flour
  • 1.50 cup Jaggery

Steps To Prepare

  • STEP 1.Dry roast the yellow split green gram for 3 minutes and then grind this roasted dal into a fine powder.
  • STEP 2.Mix the ground gram dal, gram flour, rice flour and add water to make a soft dough.

Cooking Directions

  • STEP 1.Heat ghee in a kadai.
  • STEP 2.Now take a portion of dough and put it into the sev maker.
  • STEP 3.Now press the sev maker right above the kadai and release the sev in the oil.
  • STEP 4.Fry the sev until golden brown and then break the fried sev into pieces.
  • STEP 5.In a vessel, add jaggery and ¼ cup water and boil it to make a syrup.
  • STEP 6.Now turn off the flame and dip the fried sev into the jaggery syrup.
  • STEP 7.Take out the dipped jaggery sev and put it on a plate and let it rest for an hour.

Storage And Serving Method

  • STEP 1.Store these sev in an airtight container.
