  • STEP 1.In a bowl, whisk together yogurt, chopped mint leaves, chopped coriander leaves, grated ginger, finely chopped green chilies, and salt.
  • STEP 2.Heat oil in a small pan and add mustard seeds. Once they start to splutter, add curry leaves and hing. Fry for a few seconds.
  • STEP 3.Pour the tempering over the yogurt mixture and mix well. Adjust the seasoning if needed.
  • STEP 4.Refrigerate the chutney for at least 30 minutes to allow the flavors to meld together.
