Directions: Instant Chakli Recipe: Crispy Maharashtrian Rice Flour Snack For Tea Time

  • STEP 1.In a large bowl, add rice flour, gram flour, roasted gram flour, red chilli powder, turmeric powder, cumin seeds, sesame seeds, ajwain, asafoetida, sugar and salt. Mix everything evenly to make a batter.
  • STEP 2.To this, add melted butter or hot oil and rub it into the flour mixture with your fingertips. This gives the chakli a crisp texture after frying.
  • STEP 3.Slowly add warm water and knead everything to make a smooth, soft dough. The dough should be firm enough so that it passes through the chakli mould without breaking or turning too sticky.
  • STEP 4.Grease the chakli mould with a little oil and then place a portion of the dough within it. Press it on the butter paper or a greased plate in small spiral shapes and keep the chaklis evenly sized.
  • STEP 5.In a deep kadai, heat oil over medium flame. To check if it is ready, drop a small piece of dough into it. It should rise slowly without turning brown instantly.
  • STEP 6.Carefully slide the chaklis into the hot oil and fry them on medium flame. Turn them gently and cook until they turn crisp and light golden from both sides.
  • STEP 7.Remove the chaklis and place them on a kitchen towel so that the excess oil is drained. Let them cool down thoroughly and then store in an airtight box to snack on later.
