Cooking Directions

  • STEP 1.In a mixing bowl, combine urad dal flour, rice flour, chopped onions, green chilies, ginger, curry leaves, and salt.
  • STEP 2.Add water gradually and mix well to form a thick batter. Let it rest for 10 minutes.
  • STEP 3.Heat oil in a deep pan or kadai. Wet your hands with water and take a small portion of the batter. Shape it into a round vada and make a hole in the center.
  • STEP 4.Carefully drop the vada into the hot oil and fry until golden brown and crispy. Flip it occasionally for even cooking.
  • STEP 5.Remove the vada from the oil and drain excess oil on a paper towel. Repeat the process with the remaining batter.
  • STEP 6.Serve the instant medu vada hot with coconut chutney or sambar.
  • STEP 7.Enjoy the crispy and flavorful vadas as a snack or with your favorite South Indian meal.
