Indulgent Carrot Cake Recipe: Moist Spiced Cake With Cream Cheese Frosting Recipe

Recipe By Slurrp Editorial
At its best, carrot cake is unapologetically rich and indulgent, thanks to juicy grated carrots, warm cinnamon, crunchy nuts, and a thick layer of mellow cream cheese frosting. This version keeps the vegetable tucked deep inside a soft, fragrant sponge while brown sugar and vanilla add a nuanced and balanced sweetness. Garnish the cake with toasted walnuts and a little cinnamon for a bakery-style dessert centrepiece that tastes much more festive than its name.

Directions: Indulgent Carrot Cake Recipe: Moist Spiced Cake With Cream Cheese Frosting

  • STEP 1.Prepare the cake batter first by preheating your oven to 180°C. Grease and line a 9-inch round cake tin with baking parchment.
  • STEP 2.In the meantime, in a large bowl, whisk your flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger together.
  • STEP 3.In another bowl, similarly mix the eggs, brown sugar, caster sugar, oil, and vanilla until the mixture is smooth and slightly thickened.
  • STEP 4.Gradually add the dry ingredients to the wet mixture, folding gently until just combined. Do not overmix.
  • STEP 5.Now, fold in the grated carrots, chopped walnuts, and raisins. If the batter appears unusually thick, then you can stir in 1–2 tablespoons of milk. Then pour the batter into the prepared tin and smooth the surface.
  • STEP 6.Time to bake the mix for 35–45 minutes, or until a skewer inserted into the centre comes out clean or with a few moist crumbs attached to it.
  • STEP 7.Let your cake cool in the tin for 10–15 minutes, then transfer it to a wire rack and allow it to cool completely before frosting.
  • STEP 8.Now make the cream cheese frosting. Beat your softened butter until smooth and creamy, and then pour in your cream cheese and beat briefly again, until just combined. Avoid overbeating, as the frosting can become loose.
  • STEP 9.Then gradually incorporate the sifted icing sugar, followed by vanilla and cinnamon. Carefully mix until just smooth and spreadable. If the frosting feels too soft, then refrigerate it for 15–20 minutes before using.
  • STEP 10.Finally, time to assemble the cake. Place your completely cooled cake on a serving plate.
  • STEP 11.Now spread the cream cheese frosting generously over the top. For a more indulgent finish, frost the sides as well.
  • STEP 12.After that, scatter toasted walnuts over the top and finish with a light dusting of cinnamon. Add delicate carrot ribbons for a stronger visual impact. Remember to chill for 20–30 minutes before slicing for neater slices.
