Ingredients for Indonesian Chicken Curry Recipe

  • 800 piece Chicken thigh and legs cut into bite size with bone in gm
  • 1 tablespoon Coriander seeds
  • 2 flakes Chilli tsp
  • 1 tablespoon Turmeric powder
  • 1 No.s Medium Onion Finely Chopped
  • 4 Garlic finely chopped cloves
  • 15 gram Ginger finely chopped
  • 3 tablespoon Peanut oil
  • 5 No.s Kaffir lime leaves
  • 4 stick Cinnamon piece
  • 300 milliliter Coconut milk
  • 2 Lemongrass finely chopped stalks
  • 2 tablespoon Sugar
  • As required Salt
  • As required Oil For Shallow Frying

Directions: Indonesian Chicken Curry Recipe

  • STEP 1.Roughly grind 1 tbsp coriander seeds and 1 to 2 tsp chilli flakes in a mortar and pestle. Keep aside.
  • STEP 2.In a food processor place 15 gm finely chopped ginger, 4 finely chopped cloves of garlic, 1 stalk of lemongrass finely chopped and grind for 2 minutes.
  • STEP 3.Add roughly ground mixture of coriander seeds and chilli flakes.
  • STEP 4.Add 1 tbsp turmeric powder and150 ml coconut milk.
  • STEP 5.Continue to process and grind till a smooth paste is formed.
  • STEP 6.Add 1 to 2 tbsp of water if required.
  • STEP 7.Heat oil in a pan to shallow fry the chicken.
  • STEP 8.Add 800 gm chicken thighs and legs cut into bite size pieces with bone-in.
  • STEP 9.Fry for 5 to 8 minutes on high heat till the chicken changes colour. Then remove and drain off the excess oil.
  • STEP 10. To the same pan add 2 tbsp peanut oil and when hot add the ground paste.
  • STEP 11.Fry on medium heat for 5 minutes. Stirring frequently.
  • STEP 12.Add 5 kaffir lime leaves and 4 cinnamon sticks.
  • STEP 13.Next add the cooked chicken and mix well together with the spice mixture.
  • STEP 14.Cook for 2 minutes.
  • STEP 15.Add 150 ml coconut milk and about 200 ml water and stir .
  • STEP 16.Add salt to taste, cover and cook on medium heat for 1 hour, till chicken is tender and cooked through.
  • STEP 17.At this stage, remove the lime leaves and add 2 tbsp sugar.
  • STEP 18.Then cook for a further 2 minutes.
  • STEP 19.Transfer to a dish and serve hot.
