An Indonesian and Malaysian dish, prepared with charcoal-grilled fish or other forms of seafood. Ikan bakar literally means "roasted fish" in Indonesian it is a very tasty grilled skate fish prepared seasoning with spice marinade and then wrapped up in banana leaves for grilling.

- 1 pound skate
- 8 tablespoon Oil
- 4 piece large banana leaves
- 1 Nos shallot
- 1 Nos lime
- 4 Nos shallots
- 2 Nos medium size onion
- stalk A lemongrass
- 2 Nos garlic cloves
- 1/2 teaspoon sliced ginger or 0.25 tsp ginger powder
- 1/2 teaspoon fresh galangal
- 1 tablespoon turmeric powder
- 1 tablespoon chili powder
- 1 tablespoon cooking oil
- 1 tablespoon Lime
- 1 tablespoon Belacan
- 1/2 teaspoon Salt
- 1/2 teaspoon Sugar

How to Make Ikan Bakar Recipe
STEP 01
Add some water to the chili powder and make a thick paste.

Cut belacan into pieces and dry roast the belacan slices for two minutes or until the edges start turning brown.

Now cool it down for some time

For marinade, blend chilli paste and roasted belacan to make a paste.

Cut the skate into 1 ½ inch widths and length depends upon the overall size of the skate.

Wash each skate piece with salt and water and dry it then sprinkle some salt on each piece and mix it well.

Apply the marinade,mix well and put it into the refrigerator for at least two hours.

1.heat a pan/grill, apply some oil on the pan cut a piece of banana leaf and place it into the pan,if the leaf is too small place the pieces side by side.

Now place the marinated skate piece by piece, drizzle ½ tbsp of oil over each piece and fry it for 10-15 mins.

5.drizzle ½ tbsp of oil over each piece and fry it for 10-15 mins.

6.the skate will be cooked if the flesh comes off easily from the bone,check it using a fork/spoon.

7.serve hot with sambal belacan.
