Cooking Directions

  • STEP 1.In a saucepan, heat jaggery and water until the jaggery melts and forms a syrup.
  • STEP 2.In a separate bowl, whisk eggs, coconut milk, cardamom powder, nutmeg powder, and salt.
  • STEP 3.Slowly pour the jaggery syrup into the egg mixture while continuously whisking.
  • STEP 4.Strain the mixture to remove any lumps.
  • STEP 5.Pour the mixture into individual ramekins or a baking dish.
  • STEP 6.Steam the watalappan for about 30-40 minutes or until set.
  • STEP 7.Allow it to cool and refrigerate for a few hours before serving.
  • STEP 8.Serve chilled as a dessert.

Cooking Tips

  • You can garnish the watalappan with toasted coconut flakes or chopped nuts for added texture.
  • For a vegan version, you can substitute the eggs with cornstarch or agar-agar.
