Ingredients for Hot Pepper Paste Recipe

  • 900 gram barley malt powder
  • 8 liter Water
  • 10 cup sweet rice flour
  • 8 cup rice syrup
  • 4 cup fermented soybean
  • 16 cup hot pepper powder
  • 4 cup kosher salt

Directions: Hot Pepper Paste Recipe

step 1

  • STEP 1. Mix 8 liters (32 cups) of water and 2 pounds of barley malt powder  in a large bowl.

  • STEP 1.Strain the mixture and put it in a large heavy bottomed pot.

step 3

  • STEP 1. Heat it up on the stove for about 20 minutes until it’s warm.it should be warm, not hot.

  • STEP 1. Remove it from the heat and add sweet rice flour.

  • STEP 1. Let it sit for 2 hours.

step 6

  • STEP 1. Bring to a boil for about 2 hours over medium high heat.

step 7

  • STEP 1.Add the rice syrup and mix well.

  • STEP 1.remove from the heat and wait until it completely cools down.

step 9

  • STEP 1. Add mejugaru  and mix well. Then add  hot pepper powder and mix well. Lastly add salt, and stir well.

step 10

  • STEP 1. Now keep in an earthen pot and preserve.
