Ingredients for Homemade Vada Pav With Spinach Corn Tikki Recipe
1 tablespoon Nutralite classic spread
1 inch Ginger finely chopped
2 No.s Green chillies finely chopped
1 No.s Onion Finely Chopped
1 cup Spinach leaves chopped
1/2 cup Mint leaves chopped
1/2 cup Sweet corn
4 Potatoes boiled, peeled and mashed
As required Pav buns
As required Vegetable mayoto spread on pavs
As required Lehsun chutney to spread in pav
As required Onion ringsfor pav vada
Directions: Homemade Vada Pav With Spinach Corn Tikki Recipe
step 1
STEP 1.1 to make the spinach corn tikki, in a pan add 1 tbsp nutralite classic spread, and allow it to melt. Then add 1 inch ginger finely chopped, 2 green chillies finely chopped, 1 onion finely chopped.

STEP 2.2 saute till onion is soft and lightly brown.
step 3
STEP 3.3 add 1 cup chopped spinach leaves and ½ cup chopped mint (pudina) leaveschoped. Stir and allow the spinach to wilt. Do not add salt at this time.

STEP 4.4 once leaves have wilted add ½ cp sweet corn, 4 boiled, peeled and mashed potatoes which will be the binding agent.

STEP 5.5 next add salt to taste and 1 tsp chaat masala, stir and mix well to combine all the ingredients. Turn off the heat and leave to cool.

STEP 6.6 when the mixture is cooled, make small portions and shape it into a tikki for pan frying. Dip it on bread crumbs and ensure it is well coated and keep aside. Prepare all the mixture into tikkis.

STEP 7.7 heat a tawa and melt 1 tbsp nutralite classic spread. Place the tikkis on the tawa and allow them to fry and brown evenly on all sides by turning them over

STEP 8.8 cook for 3 to4 minutes till they are brown and crisp. Keep aside.

STEP 9.9 butter [av buns with nutralite garlic and oregano spread and place them buttered side down on a preheated pan. Appy some spread on the top of the pavs as well and turn them over to toast crisp on both sides.

STEP 10.10 arrange the pavs in a plate and apply a layer of lehsun chutney,then place a dollop of veg mayo and spread it over the chutney. Then place the spinach corn tikki and onion rings. Place the top of the toasted pav bun.
