A healthy version of the pav vada made with spinach corn tikki.The Spinach Corn Vada Pav is a lip smacking recipe that you must try cooking in your kitchen. Delicate flavours from the chaat masala is combined into the spinach and corn which is then pan fried in the shape of tikki. The crispy spinach corn tikki is then placed between crispy toasted pav buns and then smeared with a dollop of Veg Mayo, along with the lehsun chutney, adding to the creaminess of this Vada Pav making it delectable to the palate.

Ingredients for Homemade Vada Pav With Spinach Corn Tikki Recipe

  • 1 tablespoon Nutralite classic spread
  • 1 inch Ginger finely chopped
  • 2 No.s Green chillies finely chopped
  • 1 No.s Onion Finely Chopped
  • 1 cup Spinach leaves chopped
  • 1/2 cup Mint leaves chopped
  • 1/2 cup Sweet corn
  • 4 Potatoes boiled, peeled and mashed
  • As required Pav buns
  • As required Vegetable mayoto spread on pavs
  • As required Lehsun chutney to spread in pav
  • As required Onion ringsfor pav vada

Directions: Homemade Vada Pav With Spinach Corn Tikki Recipe

step 1

  • STEP 1.1 to make the spinach corn tikki, in a pan add 1 tbsp nutralite classic spread, and allow it to melt. Then add 1 inch ginger finely chopped, 2 green chillies finely chopped, 1 onion finely chopped.

  • STEP 2.2 saute till onion is soft and lightly brown.

step 3

  • STEP 3.3 add 1 cup chopped spinach leaves and ½ cup chopped mint (pudina) leaveschoped. Stir and allow the spinach to wilt. Do not add salt at this time.

  • STEP 4.4 once leaves have wilted add ½ cp sweet corn, 4 boiled, peeled and mashed potatoes which will be the binding agent.

  • STEP 5.5 next add salt to taste and 1 tsp chaat masala, stir and mix well to combine all the ingredients. Turn off the heat and leave to cool.

  • STEP 6.6 when the mixture is cooled, make small portions and shape it into a tikki for pan frying. Dip it on bread crumbs and ensure it is well coated and keep aside. Prepare all the mixture into tikkis.

  • STEP 7.7 heat a tawa and melt 1 tbsp nutralite classic spread. Place the tikkis on the tawa and allow them to fry and brown evenly on all sides by turning them over

step 8

  • STEP 8.8 cook for 3 to4 minutes till they are brown and crisp. Keep aside.

step 9

  • STEP 9.9 butter [av buns with nutralite garlic and oregano spread and place them buttered side down on a preheated pan. Appy some spread on the top of the pavs as well and turn them over to toast crisp on both sides.

step 10

  • STEP 10.10 arrange the pavs in a plate and apply a layer of lehsun chutney,then place a dollop of veg mayo and spread it over the chutney. Then place the spinach corn tikki and onion rings. Place the top of the toasted pav bun.
