Thandai is a sweet Indian festive beverage made from milk with dry fruits and flavoured with saffron, mostly served chilled. This beverage is considered to be a coolant as most of the ingredients used in this have a cooling effect on the body. Hence it is named Thandai. This flavoursome beverage is made by soaking and blending all of its ingredients to a paste and mixing it with chilled milk. Traditionally this refreshing and chilled drink is served around the festival of Maha Shivratri and Holi because it gives instant energy. One can easily make this during festivals at home and serve it both cold and hot according to preference and weather. People drink it hot, mostly before bedtime, to get better sleep. There are different versions of thandai made by adding rose petals, mangoes, bhang.

Ingredients for Homemade Thandai Recipe

  • As required Ingredients for thandai
  • 1 liter Milk
  • 3/4 cup Sugar
  • As required Saffron strands A few
  • As required Ingredients for grinding
  • 1/4 cup Badam blanched and peeled
  • 1/4 cup Cashew nuts
  • 1/4 cup Pistachios
  • 2 tablespoon Poppy seeds
  • 2 teaspoon Cardamom powder
  • 1/2 teaspoon Cinnamon powder
  • 10 No.s Whole black peppercorns
  • 1/4 cup Milk

Directions: Homemade Thandai Recipe

step 1

  • STEP 1.In a blender add ¼ cup cashew nuts, ¼ cup pistachios, ¼ cup blanched almonds, 2 tbsp poppy seeds, 1 tbsp whole black pepper, 2 tsp cardamom powder, ½ tsp cinnamon powder, and ¼ cup milk. Blend till the mixture is ground to a smooth paste. Transfer to a bowl and keep aside. Add a little water to the blender to remove the residue. Keep it aside to add to the milk.

  • STEP 1.In a pan, add 1-litre of milk, a few strands of saffron, and ¾ cup sugar. Turn heat to simmer and stir continuously till sugar dissolves.

  • STEP 1.Once the sugar gets dissolved add the nut and spiced ground paste, and add the milk residue as well. Mix the paste well into the milk. This can be done by using a hand whisk or a hand blender.

  • STEP 1.When the thandai is well blended allow it to cool completely and refrigerate till it gets chilled. It can be served hot or cold according to your preference.
