A combination of roasted spices and dals ground together to make sambar powder. Sambar powder is a flavorful South Indian style coarse textured spices powder prepared by grinding various types of basic Indian spices like coriander seeds, cumin seeds, mustard seeds, black peppercorns, dry red chillies, fenugreek seeds, cinnamon, dry coconut etc. with chana dal. The Sambar recipe is originally said to be native to Maharastra, while it is presently relished by South Indians, especially the natives of Tamil Nadu. It is said that Shivaji's son Sambhaji who was one of the Maratha rulers, was making dal for himself while the chef was away. Later the chef corrected him that tamarind was not used in making dal, but he liked his way of preparing it more. Thus, the name of Sambar comes from his name. There are more than 50 varieties of Sambar today that are typically made in India. Sambar is also very famous worldwide as a South Indian tadka to various dishes.

Ingredients for Homemade Sambar Powder Recipe

  • 1 cup Toor dal
  • 1/2 cup Chana dal
  • 1/4 cup Whole white urad dal
  • 1/4 cup Methi seeds
  • 2 teaspoon Cumin seeds
  • 1/4 cup Mustard seeds
  • 1/4 cup Whole black peppercorns
  • 3 cup Whole coriander seeds
  • 1/4 cup Red chilli powder
  • 1/4 cup Turmeric powder

Directions: Homemade Sambar Powder Recipe

step 1

  • STEP 1.In a preheated pan add 1 cup toor dal, ½ cup chana dal and roast on low heat till light brown. Keep aside.

step 2

  • STEP 1.Then add ¼ cup whole white urad dal to the hot pan and roast on low heat till golden brown. Keep aside.

step 3

  • STEP 1.Next add ¼ cup methi (fenugreek) seeds, 2 tsp cumin (jeera) seeds, ¼ cup mustard seeds, ¼ cup whole black peppercorns and 3 cups whole coriander seeds. Roast on low heat till seeds get crisp and aromas come through.

step 4

  • STEP 1.In the small jar of the mixer grinder, combine all the roasted ingredients and blend to make a smooth powder.

step 5

  • STEP 1.Into the jar add ¼ cup red chilli powder, ¼ cup turmeric (Haldi) powder and blend again to mix well.

step 6

  • STEP 1.Allow the sambar powder to cool completely. Then store in an airtight container in the refrigerator for up to 4 months and use it whenever you wish.
