A classic crunchy Gujarati snack flavoured with ajwain (carom), salt and also crushed pepper papadi is a delecious and flavourful snack made with whole wheat flour, ghee, ajwain, black pepper, salt, water, oil and some chad masala y preparing a flavourful dough and deep frying it in some hot oil.

Ingredients for Homemade Papdi Recipe

  • 1 cup Whole Wheat Flour
  • 1/4 cup Ghee
  • 1 teaspoon Ajwain
  • 1 teaspoon Black pepper crushed
  • 1 teaspoon Salt
  • 1/4 cup Water
  • As required Refined oil for deep frying
  • As required Chaat masala

Directions: Homemade Papdi Recipe

step 1

  • STEP 1.In a large mixing bowl add 1cup whole wheat flour, 1tsp ajwain, 1 tsp crushed black pepper, 1tsp salt. Mix ¼ cup ghee into these ingredients till it resembles coarse crumbs. Consistency should be such that when a fistful is pressed together it should hold and when tapped it should break. This shows that the right amount of ghee has been added.

  • STEP 1.Now add water a very little at a time, so that excess water is not used. Add 1 tbsp at a time and knead to make a dough. A total of ¼ cup of water is used.

  • STEP 1.Knead the dough well for 2 to 3 minutes after all the flour has come together in order to make a smooth dough.

  • STEP 1.Cover the dough and allow it to rest for 5 minutes. Then divide the dough into 2 portions and roll each portion into a ball.

  • STEP 1.Using a rolling pin, roll out the first ball into a ¼ inch thickness on a rolling surface. 8 using a small cookie cutter or a small steel bowl or a small sharp lid , cut out circles.

  • STEP 1.Remove the excess dough, roll it into a ball and repeat the process of rolling and cutting out circles. Prick the rolled out papdi circles a few times with a fork to prevent it from puffing up.

  • STEP 1.In a deep pan or kadai, heat sufficient oil to deep fry the papdi. When the oil is hot, slide in the papdi circles to fry a few at a time.

  • STEP 1.Fry on medium heat for 4 to 5 minutes to ensure that they cook evenly, and do not quickly brown on the outside while remaining uncooked on the inside. When they turn golden brown remove them from the pan using a slotted spoon and drain them on kitchen paper towels.

  • STEP 1.17 on the warm papdis, sprinkle chaat masala and toss them. Do this in batches to ensure all are evenly coated.
