Ingredients for Homemade Noodles Recipe

  • 310 gram Bread Flour
  • 1/2 teaspoon Salt
  • 2 No.s Egg
  • As required Water
  • 1 tablespoon Soy sauce
  • 1 teaspoon Chinese Black Vinegar
  • 1 teaspoon Dark soy sauce
  • 1 teaspoon Minced ginger
  • 1 teaspoon Minced Garlic
  • As required Chopped spring onion A few
  • As required Chopped coriander A few
  • 2 As required Chilli flakes tsp
  • 2.50 teaspoon Vegetable Oil

Directions: Homemade Noodles Recipe

Cooking Directions

  • STEP 1.In a mixing bowl add 11 oz bread flour ( or any strong flour) and ½ tsp salt.
  • STEP 2.In a smaller bowl crack 2 eggs plus water to weigh together 5 ½ oz (This is because the weight of each egg varies). Whisk together.
  • STEP 3.Slowly add this egg water mixture to the flour and mix with chopsticks.
  • STEP 4.When the flour comes together, knead by hand.
  • STEP 5.The dough may appear dry, do not add any additional water. Keep kneading and try to get all the dough incorporated together.
  • STEP 6.After 5 minutes of kneading, cover the dough and let it sit for 30 minutes.
  • STEP 7.After 30 minutes the dough will be softer and more pliables. Knead it for another 5 to8 minutes.Use the folding technique, fold the dough over and push it down and outward with the heel of the palm. Repeat the process. This pushes the air out of the dough. After about 8 minutes the dough will be smooth.
  • STEP 8.To make the quantity easy to manage while rolling, divide the dough into 2 portions.
  • STEP 9.Then dust a flat surface with flour and roll out the dough using a rolling pin.
  • STEP 10. Roll it out to a thin sheet of 1 to 2 mm thickness. Make sure the sheet is evenly thin.
  • STEP 11. Sprinkle flour evenly over the surface of the sheet of dough. Turn over and sprinkle on both sides. This helps the noodles not stick together.
  • STEP 12. Fold the sheet into panels like a fan forming a rectangular shape. Using a sharp knife cut across the breadth in 1 ½ mm width. The thicker the noodle is cut , the harder it will be. Do not press down on the panels of folded dough with the other hand.
  • STEP 13. To cook the noodles, fill a pot with water and bring it to a boil. Add the desired quantity of noodles in the boiling water and cook for 2 minutes. Test 1 piece to check whether cooked.
  • STEP 14. Strain the noodles and serve in bowls.
  • STEP 15. Add 1 tbsp soy sauce ,1 tsp chinese black vinegar, 1 tsp dark soy sauce,1 tsp minced ginger, 1 tsp minced garlic, chopped spring onion, chopped coriander and 1 to 2 tsp chilli flakes as per taste.
  • STEP 16.Heat 2 ½ tsp vegetable oil and pour it over the noodles. Mix together well.

  • STEP 1.Handmade noodles can be dusted with flour and stored in the fridge for 2 days.
