  • 1 green mango Cut into 2 3cm cubes
  • 1 Green apple Cut into 2 3cm cubes
  • 4-5 Ambarella Cut into 2 3cm cubes
  • 2 Lemongrass Thinly sliced
  • As required Ginger Cut into fine strips
  • As required Garlic
  • As required Chili
  • 3 tablespoon Fish sauce
  • 3 tablespoon Sugar
  • 2 Star anise
  • flakes Chili
  • 2 Cinnamon
  • As required some herbs like mint or Thai basil

Directions: Hoa Qua Dam (vietnamese Fruit Salad) Recipe

  • STEP 1.Start by washing the beef tendon and parboil it for about 10 minutes with some salt and vinegar to cleanse the strong smell. Then dump out the whole pot and transfer the tendon into the pressure cooker.
  • STEP 2.Wash and soak the green fruits in saltwater to preventing them from turning dark and keep the flavor.
  • STEP 3.Then, roast some ginger, star anise, and cinnamon until fragrant and add to the pot together and add 1 tsp of salt. Hold the pressure cooker and let it cook for about 20-25 minutes until it’s tender. Then transfer the beef tendon into a bowl of ice water to maintain its crunchy texture.
  • STEP 4.For the salad dressing you need 2 tbsp of sugar, fish sauce, and 1 tbsp of vinegar. Then add minced garlic, ginger, and lemongrass(bruise then mince), and some chili flakes to make extra spicy and give it a good stir.
  • STEP 5.Cut the beef tendon into the same size as fruits or bite-size pieces. In a large salad mixing bowl, add all the beef tendon then mix it with about 1 tbsp of the fragrant dressing. Toss well then add the green fruits and more of the dressing and continue tossing.
