This will monitor the temperature and make sure you don't overcook the pork. This pork loin meat can get overcooked and dry if you cook it past 145f, so we strongly suggest you cook to temperature instead of time. We sell probe thermometers in the store, or we do recommend this thermometer you can buy on amazon. We wrote this recipe for a 4 pound roast that will feed about 8 people, but you can get a larger or smaller roast to feed your size of group. We recommend ordering about 1/2 pound of meat per person.
