Ingredients for Hearty Minestrone Soup Recipe

  • 2 tablespoon vegetable oil
  • 1 white onion, chopped
  • 1 cup diced celery
  • 2 cloves of garlic, finely diced
  • 1 can San Marzano tomatoes, roughly chopped
  • 6 cup vegetable broth
  • 1 cup green beans, chopped
  • 1 carrots, peeled, halved and sliced
  • 1 zucchini, chopped
  • 1 cup cauliflower florets
  • 2 cup pasta, uncooked
  • 1 can red kidney beans, drained and rinsed
  • As required For the flavour boosters
  • 1/2 juice from a lemon
  • 1 teaspoon fresh basil, finely chopped
  • 1 teaspoon rosemary, finely chopped
  • 1 teaspoon parsley, finely chopped
  • As required salt and black pepper
  • 1 pound ground beef, cooked and fat drained
  • As required Parmesan cheese for garnish

Directions: Hearty Minestrone Soup Recipe

  • STEP 1.Place a large 6-quart soup pot on medium-high heat and add oil to it.
  • STEP 2.When the oil begins to shimmer, stir in the onion, celery and garlic.
  • STEP 3.Cover and cook for 5 minutes and then stir in the tomatoes and vegetable broth, cover and bring to temperature.
  • STEP 4.Right before it comes to a boil, stir in the green beans, carrots, zucchini and cauliflower.
  • STEP 5.Add the pasta and cover. Reduce the heat and let simmer for about 20 minutes.
  • STEP 6.Stir in the red kidney beans and the flavour boosters along with the meat.
