This healthy tuna noodle casserole is a gluten free and dairy free version of old fashioned tuna noodle casserole Just like mom used to make, except without the canned cream of mushroom soup. It's made with a delicious homemade dairy free cream of mushroom soup, gluten free pasta, and finished with a grain free pork panko topping.

  • 1.33 ounce Cremini mushrooms, chopped
  • 0.08 Onion, diced
  • 1/2 Cloves garlic, minced
  • 0.17 tablespoon Sherry
  • 0.21 cup Chicken broth, can sub veggie broth
  • 0.17 teaspoon Dried thyme
  • 1/4 teaspoon Sea salt
  • 1/2 can Tuna, drained and broken up using a fork
  • 0.17 cup Peas, thawed if previously frozen
  • 0.08 cup Pork panko, or crushed up potato chips or gluten free crackers
  • 0.08 cup Full fat coconut milk
  • 0.08 cup Raw, unsalted cashews
  • 0.08 cup Water
  • 0.17 teaspoon Lemon juice or apple cider vinegar
  • 1/25 teaspoon Sea salt
