Ingredients for Healthy Spinach Rice Recipe

  • 1 tablespoon Sesame or vegetable oil
  • 1 teaspoon Cumin seeds
  • 1 inch Ginger grated
  • 1 sprig Curry leaves
  • 1/2 cup Pureed tomatoes
  • 1 teaspoon Turmeric powder
  • 2 cup Spinach leaves chopped
  • 2 cup Cooked Rice
  • 1 tablespoon Sambar powder
  • 1 teaspoon Sesame oil or ghee for finishing

Directions: Healthy Spinach Rice Recipe

step 1

  • STEP 1.In a heavy bottom pan add 1 tbsp sesame or vegetable oil. When hot add 1 tsp cumin seeds and allow to crackle. Then add 1 inch grated ginger, 1 sprig curry leaves crackle in the oil.

  • STEP 1.Next add ½ cup pureed tomatoes, 1 tsp turmeric powder, salt to taste and stir for a few seconds till well combined.

  • STEP 1.Add 2 cups chopped spinach. Cover the pan and cook on medium heat for 3 to 4 minutes till the spinach has wilted and is completely cooked. It will release a lot of moisture. Open the pan and increase the heat to high and allow the water to evaporate.

  • STEP 1.Then add 2 cups cooked rice and 1 tbsp sambar powder. Mix to combine all the ingredients well. Turn the heat to low, cover the pan and simmer for 3 to 5 minutes, to allow the flavors to combine well.

  • STEP 1.Finally add 1 tsp sesame oil or ghee which adds to the flavour of the rice.
