Cooking Directions

  • STEP 1.In a large saucepan, bring the reduced-fat milk to a boil.
  • STEP 2.Reduce the heat to low and simmer for about 1 hour, stirring occasionally, until the milk reduces to about half its original volume.
  • STEP 3.Add cardamom powder, saffron strands, and chopped pistachios to the milk.
  • STEP 4.Continue to simmer for another 10-15 minutes, stirring occasionally.
  • STEP 5.Remove from heat and let the mixture cool to room temperature.
  • STEP 6.Pour the cooled mixture into kulfi molds or small cups.
  • STEP 7.Cover with aluminum foil and freeze for at least 6 hours or until firm.
  • STEP 8.To serve, remove the kulfi from the molds or cups and enjoy!

Cooking Tips

  • For a creamier texture, you can add a small amount of condensed milk to the reduced-fat milk.
  • If you don't have kulfi molds, you can use small disposable cups or popsicle molds.
