  • 0.19 cup All purpose flour
  • 1/25 cup Granulated sugar
  • 0.17 teaspoon Double acting baking powder
  • 0.08 teaspoon Baking soda
  • 0.13 cup Shredded Zucchini
  • 0.06 cup Egg substitute
  • 1/50 cup Vegetable Oil
  • 0.17 tablespoon Lemon juice

Cooking Direction

  • STEP 1.Preheat oven to 350 F. Line 12 (2 1/2-inch) muffin pans with paper baking cups. Keep it aside. In a mixing bowl combine flour, sugar, baking powder, and baking soda and keep it aside.
  • STEP 2.In another mixing bowl combine zucchini, egg substitute, vegetable oil, lemon juice, and lemon zest. Then add it to flour mixture and stir well.
  • STEP 3.Fill each baking cup with an equal amount of the prepared batter. Bake for 20 minutes. Remove muffins from oven to wire rack. Let it cool. Enjoy.
