Cooking Directions

  • STEP 1.Start by blanching the spinach, coriander, and mint leaves in boiling water for a few minutes. Drain and blend them into a smooth paste.
  • STEP 2.Heat oil in a pan and add cumin seeds, ginger-garlic paste, and green chilies. Saute until fragrant.
  • STEP 3.Add chopped onions and cook until golden brown. Then, add the tomato puree and cook until the oil separates.
  • STEP 4.Now, add the spinach paste and cook for a few minutes. Add the chopped vegetables, salt, turmeric powder, and red chili powder. Mix well.
  • STEP 5.Cover the pan and let the vegetables cook on low heat until tender. Stir occasionally to prevent sticking.
  • STEP 6.Once the vegetables are cooked, add garam masala and kasuri methi. Mix well and cook for another minute.
  • STEP 7.Garnish with fresh cream and coriander leaves. Serve hot with rice or roti.
