Ingredients for Hallacas Recipe

  • As required Guiso
  • 680 gram pork roast, diced
  • 1.40 kilogram beef roast, diced
  • 1.40 kilogram boneless, skinless chicken thighs, diced
  • 450 gram bacon, finely chopped
  • 450 gram onion, finely chopped
  • 1/2 cup garlic, minced
  • 450 gram leek
  • 230 gram green onion
  • 680 gram Red Pepper
  • 2 cup red wine
  • 1 cup Molasses
  • 1/2 cup Capers
  • 1 cup raisins, soaked in red wine
  • As required As per reuired Mustard, Salt, Pepper, Cumin and Workshire sauce and hot sauce
  • As required Dough
  • 3 No.s packs of corn flour
  • 3 cup chicken stock
  • 1 cup oil with onoto
  • As required Toppings and Assembly
  • 450 gram red, yellow and/or green pepper, julienned
  • 450 gram white onion, cut into rings
  • 1 cup pepper filled olives
  • 1 cup Raisins
  • 450 gram boneless chicken
  • As required Vegetable oil coloured with onoto
  • 4 No.s banana leaves
  • As required White cooking string

Directions: Hallacas Recipe

step 1

  • STEP 1. heat oil in a pan and saute onions, garlic, leek, green onions, bacon and red bell pepper for 10 minutes.

step 2

  • STEP 1. season chicken, pork and steak with salt, pepper, mustard, cumin, red wine and work shire sauce.

step 3

  • STEP 1. add seasoned meat to the pan with the rest of the ingredients and cook until the meat becomes tender.

  • STEP 1. in a bowl take onoto, molasses, chicken stock and salt in it.

step 5

  • STEP 1. gradually add flour in order to form a soft dough.

step 6

  • STEP 1.divide the cough into small balls and set aside

  • STEP 1. poach the chicken breast in water for about 20 minutes, pull out the strings and keep it aside.

  • STEP 1.wash the banana leaves and cut it into rectangular pieces.

step 9

  • STEP 1. dip the dough balls in vegetable oil and flatten the ball on banana leaf.

step 10

  • STEP 1. add stew, pepper slices, onion rings, olive, raisins and chicken strings.

step 11

  • STEP 1. fold the leaf in such a way that the filling won’t come out.

step 12

  • STEP 1. tie it with a leaf and steam boil it for 20 minutes.
