Cooking Directions

  • STEP 1.Start by washing and slicing the bitter gourd into thin rounds.
  • STEP 2.Heat oil in a pan and add mustard seeds, cumin seeds, and curry leaves. Let them splutter.
  • STEP 3.Add the sliced bitter gourd and sauté until they turn slightly brown.
  • STEP 4.In a separate bowl, soak tamarind in warm water and extract the juice.
  • STEP 5.Add the tamarind juice to the pan along with salt, turmeric powder, red chili powder, and jaggery.
  • STEP 6.Mix well and let it simmer for 10-15 minutes until the bitter gourd is cooked and the flavors are well combined.
  • STEP 7.Garnish with fresh coriander leaves and serve hot with rice or roti.

  • To reduce the bitterness of the gourd, you can soak the sliced bitter gourd in salted water for 15-20 minutes before cooking.
