Guyanese Black Cake is a rich, dense and moist cake. It is made with rum soaked fruits and a dark sugar caramel gives it its signature black color. It is traditionally made at Christmas and for weddings. Black Cake is a staple at Christmas in Guyana and many countries in the Caribbean. This is also always served at a Guyanese wedding, always. It’s a dense cake that’s made of dried fruits, nuts and rum. This cake is soaked in rum weekly and will keep for up to a month, as long as you keep adding alcohol. This will not only preserve the cake, but also keep it moist.

Ingredients for Guyanese Black Cake Recipe

  • 450 gram Butter
  • 450 gram Granulated Sugar
  • 350 gram Flour
  • 1.80 kilogram soaked and blended fruits
  • 9 No.s Egg
  • 1 teaspoon baking powder
  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon ground clove
  • 1 teaspoon Ground Nutmeg
  • 1 teaspoon orange zest
  • 5 tablespoon burnt sugar
  • 1/2 cup red wine
  • 3 tablespoon dark rum
  • 1 No.s Cooking spray
  • 1 No.s Parchment Paper
  • 1 No.s Aluminum Foil

Directions: Guyanese Black Cake Recipe

step 1

  • STEP 1.Mix cream butter and sifted sugar until most of the sugar crystals dissolve. Add eggs to creamed butter and sugar until all of the eggs are fully incorporated into the mixture.

  • STEP 1.After the eggs have been added, add fruits to butter, sugar and eggs mixture and combine together until all of the fruits have been completely mixed into the batter. Next add wine and orange zest to batter.

  • STEP 1.Gradually add burnt sugar into the batter. Add in flour, baking powder, ground cinnamon, ground cloves, ground nutmeg. Preheat oven at 300 degree F.

  • STEP 1.Grease baking pans with cooking spray or oil and line the bottom of pan with parchment paper. Pour the batter into the baking pan. Wrap the aluminium at the bottom of the pan.

  • STEP 1.Place the cake on middle rack of the oven and bake for 75 to 90 minutes. Once cake is fully cooked then brush it with 1 to 1 1/2 tbsp of rum, while cake is still hot. Keep aside and let cool. Allow the cake to cool completely then remove from the baking pan. The cake is ready.
