Gutti vankaya is a stuffed brinjal preparation from andhra made with a spicy and flavourful filling. It can be made dry or with a little thicker gravy. It is best when made with small baby brinjals. I prefer the dry version. It goes well with anything, rotis, puris or as a side dish with dal/rasam and rice.
