  • 1/2 cups cooked short- or medium-grain rice
  • 1/4 cups ½fresh thick curd
  • As required ½ cup milk
  • As required preferably full-fat
  • 1/4 nos small green chilli
  • As required finely chopped
  • 1/4 tsp finely grated ginger
  • 1/4 tbsp fresh coriander
  • As required finely chopped
  • As required Salt
  • As required to taste
  • 1/4 tbsp vegetable oil or sesame oil
  • 1/4 tsp mustard seeds
  • 1/4 tsp Urad dal
  • 1/4 tsp Chana dal
  • 4.50 nos – curry leaves
  • 3/4 nos – dried red chillies
  • As required broken
  • As required a generous pinch of asafoetida
  • 1/2 tbsp roasted or fried cashews
  • As required Optional
  • 3/4 tbsp –pomegranate seeds
  • As required A little chopped coriander
  • As required Optional: finely grated carrot or a few finely chopped cucumber pieces

Directions: Gut-Friendly, Chatpata Curd Rice Recipe For A Homely Probiotic Fix

  • STEP 1.It is up to you whether you wish to choose freshly cooked rice or leftover rice that is soft rather than fluffy and separate. If cooking from scratch, add a little extra water so the grains become tender and slightly mushy.
  • STEP 2.Transfer the cooked rice to a large bowl while still warm and mash gently with the back of a spoon. You want a soft, creamy texture without turning it into a complete paste.
  • STEP 3.Allow your rice to come down to room temperature. Do not mix chilled curd into piping-hot rice, as the heat will affect its texture.
  • STEP 4.Now, whisk the curd until smooth and fold it into the rice. Add milk gradually, stirring until you have a creamy but spoonable consistency.
  • STEP 5.Time to mix in your grated ginger, chopped green chilli, coriander, and salt. Taste and adjust the chilli according to how adventurous you want your curd rice. Adding a little milk also helps keep the mixture creamy, especially if the curd is rather tangy. 
  • STEP 6.Heat oil in a small pan, then add mustard seeds and let them splutter. Add in your urad dal and chana dal and fry until lightly golden.
  • STEP 7.Then pour in the dried red chillies, curry leaves, and asafoetida. Stir for a few seconds until the curry leaves turn fragrant. You can add the cashews at this stage if using.
  • STEP 8.Finally, pour the hot tempering over your curd rice and mix gently. Taste once more for salt.
  • STEP 9.Garnish with pomegranate seeds and fresh coriander, and serve cool or at room temperature with a little mango pickle, papad, or a simple vegetable side.
