Cooking Directions

  • STEP 1.To make the Kadi, whisk together yogurt, gram flour, and water in a bowl.
  • STEP 2.Heat oil in a pan and add mustard seeds, cumin seeds, fenugreek seeds, and asafoetida.
  • STEP 3.Add ginger, green chilies, and curry leaves. Then, add the yogurt mixture and cook until thickened.
  • STEP 4.For the Khichdi, rinse rice and lentils and cook them together with water, turmeric, and salt.
  • STEP 5.Serve the Kadi and Khichdi together, garnished with fried fenugreek leaves and accompanied by rice and papad.

Cooking Tips

  • Make sure to whisk the yogurt and gram flour mixture well to avoid lumps in the Kadi.
  • You can adjust the consistency of the Kadi by adding more or less water.
