Ingredients for Gujaratti Fajeto/Mango Kadhi Recipe
As required Ingredients for kadhi
1 cup Yogurt
3 tablespoon Besan
1/2 cup Ripe mango puree
1 inch Ginger grated
2 Green chillies slit
1/4 teaspoon Asafoetida
1/4 teaspoon Turmeric powder
1/2 teaspoon Red chilli powder
As required Salt
2 cup Water
As required Jaggery optional
As required Ingredients for Tempering
1 tablespoon Ghee
1/2 teaspoon Mustard seeds
1/2 teaspoon Cumin seeds
1 stick Cinnamon inch
1 Dry red chilli Nos
Directions: Gujaratti Fajeto/mango Kadhi Recipe
STEP 1.1 in a saucepan or any deep pan add 1 cup yogurt, 3 tbsp besan (gram flour) and whisk well to make a smooth lump free mixture.
STEP 2.1 add 1/2 cup ripe mango puree. Add 1 inch grated ginger, 2 slit green chillies, ¼ tsp asafoetida (hing), ¼ tsp turmeric (haldi) powder, ½ tsp red chilli powder and salt to taste.
STEP 3.1 add 2 cups of water and whisk to mix well with all the ingredients.
STEP 4.1 turn on the heat and continue to whisk. Turn the heat to high and keep whisking for 3 to 5 minutes till the kadhi reaches a brisk boil and thickens when the besan cooks.
STEP 5.1 if the kadhi gets too thick, add a little water to adjust the consistency.
STEP 6.1 taste for sweetness and salt and adjust accordingly,by adding jaggery if required. Turn off the heat and keep aside.
STEP 7.1 for the tadka,in a preheated pan add 1 tbsp ghee, ½ tsp mustard seeds, ½ tsp jeera seeds and allow to crackle. Next add 1 inch cinnamon (dalchini) stick and 1 dry red chilli. Stir. Turn off the heat.
STEP 8.1 pour it over the kadhi.
STEP 9.1 gujarati fajeto is ready to serve
