Gujarati cuisine is known for its simplicity, balance of flavours and ingenious use of seasonal ingredients. During the times when tomatoes were available only during winters we looked forward to the arrival of the tart round variety of beautiful-shiny tomatoes to make soup, ketchup and our favourite subzi. This chunky tomato-garlic dip is a winter staple in our house. We usually have it with bhakhri or millet rotla. However, this versatile dip tastes good with any flatbread or crackers.
