A dish with a few ingredients like colocosia leaves, gram flour, asafeotida, curd, corriander powder, turmeric powder, red chilli powder, jaggey, mustard seeds, cumin seeds, sesame seeds, curry leaves and corriander leaves.

Ingredients for Gujarati Patra/Alu Vadi Recipe

  • 5 No.s Colocasia leaves
  • 2.50 cup Besan
  • 3/4 teaspoon Asafoetida
  • 1/4 teaspoon Turmeric powder
  • 1/2 teaspoon Red chilli powder
  • 1 teaspoon Coriander powder
  • 1 tablespoon Curd
  • 1 teaspoon Ginger chopped
  • 1 tablespoon Jaggery
  • 1/2 cup Tamarind water
  • As required Salt
  • As required Ingredients for Tempering
  • 1/2 teaspoon Mustards seeds
  • 1 teaspoon Cumin seeds
  • 2 teaspoon Sesame Seeds
  • 2 sprig Curry leaves
  • As required Coriander leaves for garnish A few

Directions: Gujarati Patra/alu Vadi Recipe

step 1

  • STEP 1.Wash and dry 5 large colocasia (arbi) leaves. Cut off the stalk and devien the leaf by sliding the knife along the vein and cutting it off. Be careful not to tear the leaf.

step 2

  • STEP 1.For the masala, in a large mixing bowl add 2 ½ cups besan,½ tsp asafoetida,¼ tsp turmeric powder, ½ tsp red chilli powder, 1 tps coriander powder, 1 tbsp curd, salt to taste, 1 tsp chopped ginger, 1 tbsp jaggery. Adding chopped green chilli is optional.

step 3

  • STEP 1.For sourness add ½ cup tamarind water and mix to make a thick paste which is well combined and without lumps. Check for seasoning, it should taste sweet and sour and spicy. Adjust accordingly.

step 4

  • STEP 1.Take a prepared colocasia leaf and turn it over. On the back, lighter green side generously smear the prepared masala to cover the complete leaf surface.

step 5

  • STEP 1.Take a second leaf and place it over the first leaf. Spread the masala.

step 6

  • STEP 1.Repeat this process until there are 4 to5 layers of leaves.

  • STEP 1.Next fold in the sides of the layered leaves and press it down.
