A pudla/ chilla is a gujrati recipe which is very soimilar to a pancake made out of whole wheat flour (atta) and jaggery topped with cardamom flavoured caramelised bananas , freshly grated coconut and roasted cashew. Try this recipe for dessert of evening snack along with some hot te or coffee.

  • 1/2 cup Jaggery
  • 0.33 cup Water for batter
  • 1 cup Whole Wheat Flour
  • 1 tablespoon Nutralite classic spread for frying
  • As required Ingredients for topping
  • 1 No.s Banana ripe cut into rounds
  • 2 tablespoon Jaggery powdered
  • 2 tablespoon Nutralite classic spread for roasting cashew
  • 1/4 cup Cashew nuts
  • 1 tablespoon Coconut freshly grated for garnishing

Directions: Gujarati Meetha Pudla Recipe

  • STEP 1.In a mixing bowl, dissolve ½ cup jaggery in ⅓ cup water. This will take a few minutes till the mixture is smooth.
  • STEP 2.To this add 1 cup whole wheat flour (atta). Add water as required and mix well to make a thick batter of pouring consistency with no lumps.
  • STEP 3.Preheat a pan, turn the heat to low and add 1 tbsp nutralite classic spread or any cooking oil or butter. Allow it to melt.
  • STEP 4.Add ¼ cup cashew nuts and roast on low to medium heat till they turn golden and crisp. Keep aside.
  • STEP 5.For the bananas, preheat a pan and add 1 tbsp nutralite classic spread or any cooking oil or butter. Add 2 tbsp powdered jaggery and allow them to melt together until it forms a smooth mixture.
  • STEP 6.At this stage add slices of 1 ripe banana cut into rounds. Spoon the jaggery mixture over the bananas to ensure that they get well coated. After about a minute the jaggery mixture will get sticky. Turn the heat to low and sprinkle 1 tsp cardamom (elaichi) powder over all the banana pieces. Turn off the heat and keep aside.
  • STEP 7.Preheat a pan and add 1 tbsp nutralite classic spread or cooking oil or butter on the pan and spread it around the surface of the pan.
  • STEP 8.Spoon the batter on to the hot pan to make small pudla of about 3 inch diameter circles. When the top of the pudla looks steamed, flip it over to cook evenly on the other side. When pulda or chillas have developed golden brown spots on both sides and are evenly cooked, remove from the pan.
  • STEP 9.Spoon 1 to 2 pieces of caramelised banana in the centre of each pudla, sprinkle freshly grated coconut and top with a few roasted cashew nuts. Meetha pudla is ready to be served as a dessert.
