Directions: Veggie Guacamole Burger By Chloe Recipe

Cooking Directions

  • STEP 1.In a large bowl, mash the black beans with a fork until they are mostly smooth.
  • STEP 2.Add the cooked quinoa, breadcrumbs, onion, garlic, cumin, paprika, salt, and pepper to the bowl with the black beans. Mix well to combine.
  • STEP 3.Form the mixture into patties, about 1/2 inch thick. Place the patties on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.
  • STEP 4.Heat a grill or grill pan over medium heat. Brush the patties with olive oil and grill for 4-5 minutes per side, or until they are heated through and have grill marks.
  • STEP 5.While the patties are grilling, prepare the guacamole. In a small bowl, mash the avocado with a fork until smooth. Stir in the lime juice, cilantro, red onion, tomato, salt, and pepper.
  • STEP 6.To assemble the burgers, spread a generous amount of guacamole on the bottom half of each bun. Place a veggie patty on top of the guacamole, followed by lettuce, tomato, and onion. Top with the other half of the bun.
  • STEP 7.Serve the Veggie Guacamole Burgers immediately, with extra guacamole on the side if desired.

Cooking Tips

  • Make sure to refrigerate the patties before grilling to help them hold their shape.
  • Feel free to customize the toppings to your liking. Add cheese, pickles, or any other condiments you enjoy.
  • If you don't have a grill or grill pan, you can also cook the patties in a skillet over medium heat.
  • Serve the burgers with a side of sweet potato fries or a fresh salad for a complete meal.

Storage and Serving

  • Leftover veggie patties can be stored in an airtight container in the refrigerator for up to 3 days.
  • To reheat the patties, place them in a preheated oven at 350°F for about 10 minutes, or until heated through.
  • Serve the burgers on toasted buns for added flavor and texture.
  • Garnish the burgers with additional cilantro or sliced avocado for an extra pop of freshness.
