How to Make Grilled Humus Paneer Bhurji Sandwich Recipe

STEP 01

In a grinding jar of the mixer grinder add 1 cup cooked chickpeas (kabuli chana), 4 garlic cloves, ½ tsp cumin powder, 2 tbsp sesame seeds, juice of 1 lemon, ¼ cup Extra virgin olive oil and ½ cup water. Blend to make a smooth hummus.

STEP 02

In a preheated pan add 2 tbsp olive oil, 1 onion finely chopped, 1 capsicum finely chopped and saute till onions are soft.

STEP 03

Add 1 grated carrot and ¼ tsp cumin powder, ¼ tsp red chilli powder and saute for a few seconds.

STEP 04

Add ½ cup grated paneer and ¼ cup chopped mint leaves and stir to combine well.

STEP 05

Grease the grill pan by brushing the surface with butter.

STEP 06

Spread hummus on a slice of bread and then spoon paneer bhurji on to it. Top this with a generous spoon of grated cheese. Apply butter on the second slice of bread and use this to close the sandwich.

STEP 07

Grill and turn over till both sides of the sandwich are golden and crisp.

STEP 08

Cut in half and serve hot with sauce.
