  • As required Haloumi, being a firm cheese, is great for this salad. you could also use goat's cheese, and instead of just dusting it with flour, you could crumb and shallow fry it. it does end up with a wonderful texture, crisp on the outside and melting in the middle. i love this salad served in the middle of the table for everyone to help themselves great at lunch or dinner
  • 2 5 mm thick slices haloumi cheese
  • 1/2 centimeter 6 thick slices crusty bread, cut into dice
  • 1/4 Small red onion, roughly diced
  • 1/4 Lebanese cucumber, roughly diced
  • 1/2 Large ripe firm tomatoes, roughly diced
  • 25 milliliter Extra virgin olive oil, extra to serve
  • 1/2 tablespoon Red wine vinegar
  • As required Sea salt and freshly ground pepper
  • 1/4 Small handful basil leaves, torn
  • As required Olive oil, for frying
