Make a paste of ginger and garlic (around 1tbsp together)

STEP 04

Boil 3 potatoes, then peel off their skin and mash them.

STEP 05

In a saucepan add 500ml of water and let it come to shimmer. Then add 2 bunches (small) spinach and let it boil for 1min.

Let it cool and then grind it into a smooth puree.

STEP 09

In a kadai take 2tbsp cooking oil, add the chopped capsicum, spring onions,½ cup frozen green peas.

STEP 10

Mix it and roast them for a minute or so. Keep the flame high as we want the capsicum to get roast very well.

STEP 11

Then add 1tbsp ginger-garlic paste, chopped green chilies, green beans, green tomatoes, and one full cup of spring onions(green portion).

STEP 12

For binding add the mashed potatoes.

STEP 13

For the spices we have- 1tbsp pav bhaji masala, 1tsp red chili powder, salt to taste, 2tbsp butter, and ½ tsp kasoori methi.

STEP 14

Now we will mix all the ingredients and cook it for at least 8-10 mins. Cover it with the lid to fasten up the process. And keep stirring it now and then.

STEP 15

Now with a potato masher or any you have and start mashing the veggies.

STEP 16

Then add the spinach puree, squeeze one lemon juice, 3tbsp chopped coriander leaves, and 3tsp butter.

STEP 17

Now we will mix it and let it cook for 2mins.

STEP 18

If you want you can give it a last mash because we don’t want our veggies to be recognized.

STEP 19

If it is a little thick according to you, you can add water to adjust the consistency.

STEP 20

Mix it and take it out from the flame as our bhaji is ready.

STEP 21

Now for the pav let’s takes a tawa to add 1tsp butter and let it melt.

STEP 23

Add the pav and let it roast from both sides sticking to the bhaji and butter.

STEP 24

So now our pav and bhaji both are ready.
