A simple yet delicious stir fry of crunchy green beans and chicken tossed together and flavoured with sesame oil and sichuan pepper., a Chinese fermented rice wine, is the secret sauce that makes this recipe sing. It’s pretty easy to find at Asian markets, but don’t confuse it with rice vinegar! If you see bottles labeled “rice cooking wine” without the Shaoxing designation, they will work too. While you can substitute dry sherry, nothing else achieves quite the same flavor.

Ingredients for Green Bean Chicken Stir Fry Recipe

  • 400 gram Chicken Breast Diced
  • 1 inch Green beans or runner beans cut into s 300 gm
  • 3 Garlic finely chopped cloves
  • 5 gram Ginger finely chopped
  • 1 teaspoon Sesame oil
  • 1 tablespoon Rice Wine
  • 1 tablespoon Light soy sauce
  • 1 teaspoon Ground sichuan pepper
  • 1 teaspoon cornflour
  • 20 milliliter Water
  • As required Salt
  • 1 tablespoon Oil

Directions: Green Bean Chicken Stir Fry Recipe

step 1

  • STEP 1.-1)place 400 gm diced chicken breast in a large mixing bowl, add 1 tbsp rice wine and salt to taste and mix well together.

step 2

  • STEP 2.-2)fill a saucepan with water and bring it to a boil.

step 3

  • STEP 3.-3)place 300 gm green bean cut into 1 inch pieces into the boiling water and blanch for 2 minutes.

step 4

  • STEP 4.-4)use a slotted spoon to remove the beans and drain off the excess water. Keep beans aside.

step 5

  • STEP 5.-5)in a wok heat ½ tbsp oil on high heat add the marinated chicken pieces and stir fry for 5 minutes. Remove from the wok and keep aside.

step 6

  • STEP 6.-6)heat another ½ tbsp of oil in the wok, add 3 cloves finely chopped garlic, 5 gm finely chopped ginger, 1 tsp coarsely ground sichuan pepper and stir fry for a few seconds.

step 7

  • STEP 7.-7)return the chicken and the green beans to the wok and stir fry for 1 minute.

step 8

  • STEP 8.-8)add 1 tbsp light soy sauce and stir for another 30 seconds.

step 9

  • STEP 9.-9)pour in the cornflour and water mixture of 1 tsp cornflour and 20 ml water and stir well.

step 10

  • STEP 10.-10)add salt to taste and 1 tsp sesame oil and stir together for a few seconds. Turn off the heat.

step 11

  • STEP 11.-11)transfer to a dish and serve hot.
