  • 1/2 teaspoon Red Chili Powder
  • 1/4 teaspoon Turmeric Powder

  • 1 tablespoon Lemon Juice
  • 1 tablespoon Oil
  • 0.13 teaspoon Asafoetida

Cooking Directions

  • STEP 1.Wash and peel the carrots. Grate them using a grater.
  • STEP 2.In a mixing bowl, add the grated carrots, salt, red chili powder, turmeric powder, mustard seeds, fenugreek seeds, and lemon juice. Mix well.
  • STEP 3.Heat oil in a pan and add mustard seeds. Once they start spluttering, add asafoetida and curry leaves. Fry for a few seconds.
  • STEP 4.Pour this tempering over the carrot mixture and mix well.
  • STEP 5.Transfer the pickle to a clean, dry jar and let it sit for a day to allow the flavors to develop.
  • STEP 6.Store the grated carrot pickle in the refrigerator. It can be consumed immediately and stays good for up to a month.
