Cooking Directions

  • STEP 1.In a mixing bowl, combine gram flour, red chili powder, turmeric powder, carom seeds, salt, and oil. Mix well.
  • STEP 2.Gradually add water and knead into a soft dough. Divide the dough into small portions and shape them into cylindrical dumplings.
  • STEP 3.Boil water in a pan and add the dumplings. Cook until they float to the surface. Remove and keep aside.
  • STEP 4.In a separate pan, heat oil and add cumin seeds. Once they splutter, add asafoetida, ginger-garlic paste, and chopped onions. Saute until onions turn golden brown.
  • STEP 5.Add tomato puree, turmeric powder, red chili powder, coriander powder, and salt. Cook until the oil separates from the masala.
  • STEP 6.Whisk yogurt with water and add it to the pan. Stir well and bring it to a boil.
  • STEP 7.Add the cooked dumplings to the gravy and simmer for a few minutes. Garnish with chopped coriander leaves.
  • STEP 8.Serve hot with steamed rice or roti.

Cooking Tips

  • Make sure to knead the dough for the dumplings well to achieve a smooth texture.
  • To check if the dumplings are cooked, insert a toothpick or knife into one. If it comes out clean, they are done.
  • Adjust the spice levels according to your preference by increasing or decreasing the amount of red chili powder.
  • For a richer gravy, you can add a tablespoon of ghee while tempering the cumin seeds.

Storage and Serving

  • Leftover Govind Gatte can be stored in an airtight container in the refrigerator for up to 2 days.
  • Reheat the dish in a pan or microwave before serving.
  • Garnish with fresh coriander leaves and serve hot with steamed rice or roti.
